POST-EXAM PARTY PUDDING!!

BAILEY’S BREAD AND BUTTER PUDDING

 
Time taken: An hour and a half
Ingredients: A bar of chocolate, 50g butter, 4 pain au chocolat, 8 eggs, 175g caster sugar, a teaspoon of vanilla extract, 300ml milk, 150ml cream and 150ml Baileys (Plus, extra for you to drink!)

IT’S THE END OF EXAMS!!!
This blog post marks the end of an extremely shitty month or so for student’s everywhere! I know we had Christmas and we’ve had snow, and there have been lovely moments, but for a lot of young people there life has BEEN revision for so long now.
 
For a big bunch of my friends... Tiddy, Ville, Woody, The Bittmeister… today, the last day of exams, brings with it the end of all their hard work. At last. They’ve been such superstars!
 
WELL DONE EVERYBODY. You’re all heroes!
 
And tonight, all these heroes can drinkkkkkkkk. And me too! I’m out tonight to celebrate the end of other people’s exams, which is a good enough excuse for me! Tonight, we’re out on Newcastle! And I’m really looking forward to a drink. Like, a lot. Having only drunk once so far this year, for Woody’s birthday, it could all end in disaster. But c’est la vie! Drinkkkkkkkkk.

Which reminded me earlier, of a very wonderful recipe that me and my Mother Bear concocted while I was home over Christmas break! One I’m here to share with you today. This recipe is puddinggggggg with added drinkkkkkkkkk. Me and my Mother Bear agree: the best idea ever!
To alcoholic desserts, we say YES
 
So, the Mother Bear and myself, we pieced this recipe together based upon one that we found over Christmas on the Bailey’s official website. So, I kid you not, it has a full blown Irish seal of approval. This recipe makes kind of 4 mammoth portions or 6 regular ones (we went mammoth, of course). Without further ado, ladies and gentleman, here is how to bring Baileys Bread & Butter Pudding into your life, in just ten easy steps…

1.       Heat your oven to 160°C and grease a baking dish with the butter.

2.       Slice your pain au chocolat into slices that are about 3cm think (get your ruler out!).

3.       Arrange you sliced pain au chocolat evenly in two rows in your dish, side by side so that they fit snugly.

4.       Crack your eggs so that the whites go into one bowl and the yolks go into another.
ChefBeHere Top Tip: The egg whites aren’t needed in this recipe but don’t throw them away! You can use them for omelettes maybe or to make meringues. Stick em in the fridge and give it some thought.
5.       Make a custard by whisking the egg yolks and sugar together until they’ve combined.

6.       Place your Baileys, milk, vanilla extract and cream in a saucepan, bring to a simmer and then add your egg mixture to the pan, stirring all the time.

7.       Keep stirring over a low heat for 5 minutes, then pour the warm custard into your baking dish, pressing the pain au chocolat down so it absorbs the liquid.

8.       Leave to stand for 30 minutes. Eat your main course in this time!

9.       When you’ve eaten, place the baking dish in the oven to cook for 20 minutes. Meanwhile, break up your chocolate and melt it in a bowl over hot water
ChefBeHere Top Tip: The Baileys website advocates using dark chocolate. Me and the Mother Bear didn’t have any when we were making this so we made do with milk chocolate instead, but I can imagine dark chocolate would have been very tasty. Maybe, get some if you can
10.   Remove your pudding from the oven and leave to stand 10 minutes, then generously drizzle the pudding with the melted chocolate. Serve it up!
And you should be tucking into something like this…
 
What do you think? Isn’t this a brilliant use of Baileys?? Like, I could have lived the rest of my life just drinking Baileys straight, or in Toblerone cocktails, and that would have been a pretty amazing life. But now that I know it can be used in desserts… well. What can I say??

 
If, like me, you’re a lover of the Irish Cream then DEFINITELY GIVE THIS A TRY. If, like many of my friends, you’ve finished exams today after a month’s hard slog spent revising, then I FORBID YOU TO EAT A DESSERT THAT DOESN’T CONTAIN ALCOHOL. Really. Everybody, just go make this.
 
 
If, somehow, incredibly, you happen to have Baileys left over from Christmas (how have you now drunk it??) then the universe is compelling you to chuck it in this pudding.
